We have met the nicest couple who enjoy our beef and we enjoy our visits with them! They shared this amazing short rib recipe with us... hope you enjoy it too
Preheat oven to 350 degrees. Heat your Dutch oven on your stove top and add olive oil. Season short ribs with salt and pepper, then cook for 10-25 minutes until well browned on all sides. Remove the short ribs and set aside. Add tomato paste and heat for 2 minutes. Add wine and deglaze pan. Bring to boil and cook for 10-15 minutes until the liquid is reduced by half. Add beef stock, return the short ribs to the pot, add the halved garlic cut side down and bring to a boil. Baste the ribs. Put the lid on the Dutch oven and cook at 350 F for 3-4 hours until the meat is fall-off-the-bone tender. Be sure to baste the ribs periodically ~ serves 4.
